Quarterback Apple Crisp
Recipe is from Joe Montana's Family Playbook for Managing High Blood Pressure
Ingredients
8 medium Granny Smith apples, peeled and cut into 1/2-inch cubes
1 lemon, juiced (about 2 tablespoons)
1/2 cup white sugar
1 teaspoon cinnamon
4 tablespoons whole-wheat flour
1 cup quick-cooking oats
1/2 cup whole-wheat flour
3/4 cup light brown sugar, unpacked
4 tablespoons tub margarine, chilled
2 cups low-fat plain yogurt
1/4 cup pure maple syrup
Directions
For the filling, preheat the oven to 400 degrees F. In a large bowl, combine the apples, lemon juice, sugar, cinnamon and whole-wheat flour. Toss to combine. Place in a 9x11-inch baking dish.
For the crisp, combine the oats, remaining whole-wheat flour and light brown sugar and mix. With your hands or using two forks, mix in the chilled margarine until you have a course crumbly mixture. Spread the mixture on top of the apples and place in the oven. Bake 40 to 45 minutes or until brown and bubbly.
For the Maple Yogurt Topping, combine the yogurt and maple syrup and eat with apple crisp.
