| Pan-fried Lemon Sole or Flounder (Fish Sticks) by Lisa Flaxman Total time = 10-12 minutes Prep time = 5 minutes + Cooking time = 5-7 minutes |
| Desperate for a new dish for her son, Lisa thought of trying fish
sticks, but found them to be fried and full of additives. So she created her
own version and the whole family loved it. |
| Thin white fish filet 1 egg, lightly beaten 2 tablespoons butter 1 cup bread crumbs 1/4 cup Parmesan cheese 4 tablespoons lemon juice |
| Wash fish and pat-dry. Dip in egg and roll
in bread crumbs and Parmesan cheese. Melt 1 tablespoon butter in non-stick
frying pan and cook one side of fish on medium heat until brown. Add 2
tablespoons lemon and cook for another minute. Repeat for second side and cook
until done. Serve with Carrots Almondine. |

| Alternative cooking method: Place in
baking dish and bake at 350 degrees F for 10-15 minutes until done. Top with
lemon juice. |
