| Broiled Salmon by Barbara Goldfarb Prep time = 15 minutes |
| This fish is easy and quick to prepare. The soy sauce makes it crispy
and the mustard gives it a zing. You can always leave the kids' portions plain
or put teriyaki sauce on them. Great for last-minute entertaining or a special
family dinner. |
| Salmon fillets (about 1/2 pound per serving) Grainy Dijon mustard Soy sauce |
| Preheat broiler and move shelf so that
heat source is approximately 4 inches away. Wash salmon fillet, pat dry with
paper towel and place skin-side down in a shallow baking pan. Brush top of fish
slices with generous coating of mustard. Sprinkle soy sauce over each piece and
broil for 10-12 minutes. Don't flip the fish during cooking. |

| Other variations: Use teriyaki sauce instead of soy sauce Use soy sauce alone for a crispy texture Coat with honey, brown sugar, and melted butter, then broil Top with chopped parsley, fresh chives, and fresh dill Broil and serve with sauce of 2 tablespoons mayonnaise and 1 tablespoon mustard Broil and serve with sauce of 1 cup plain yogurt + 1 tablespoon dill |
