Fruity Yogurt Crepes
Richard James
The problem is kids do two things: They eat constantly (mostly things unhealthy) and they consume fast food (again, unhealthy) instead of fruit, which is a healthy snack between meals.
Ingredients
2 1/2 cups vanilla yogurt
3/4 cup granola
3 1/2 cups assorted fresh fruit (peaches, strawberries, kiwi, grapes, blueberries, apricots and mango), sliced
8 fajita-size flour tortillas
Directions
Place tortillas on a work surface. Spoon 1/4 cup yogurt down the center of each and top with 1/4 fruit salad. Roll up and place onto serving plates; top each with remaining fruit and a dollop of yogurt. Sprinkle with granola and serve.
Suggestions
Serves eight.
