Plum Honey Compote
Recipe is from Feeding Baby: Simple, Healthy Recipes for Babies and Their Families (Ten Speed Press, 2003) by Joachim and Christine Splichal
Ingredients
1 cup water
1 teaspoon freshly squeezed lemon juice
1/2 cup honey
16 assorted plums, peeled, pitted and cut into 1/2-inch pieces
1/4 cup golden raisins
Zest of 1 lemon
1 strip orange zest
Directions
In a large saucepan, combine the water, lemon juice and honey and bring to a boil. Boil for three minutes. Add the plums, raisins, lemon zest and orange zest. Decrease the heat to a simmer. Cook for about five minutes, until the plums are tender but not mushy. Watch the plums closely; depending on their freshness, they can become too soft very quickly. Let cool.
Serve at room temperature. Leftovers can be refrigerated for up to two days or frozen for up to two months. Serves four.

Suggestions
Notes: Any stone fruit in season can be used in this compote: cherries, peaches or apricots. Because this contains honey, it's not suitable for children younger than 1 year old.
