Crust: 1 cup flour ½ cup shortening 1 teaspoon salt ¼ cup ice water Filling: 1 ½ cups cottage cheese 2 tablespoons flour 4 eggs 2 cups milk 1 ½ teaspoons Dijon mustard 2 cups sliced fresh asparagus spears 1 cup grated Swiss cheese |

In a large bowl, combine the cottage cheese, flour, eggs, milk and Dijon mustard. Season with salt and pepper to taste. With a hand blender, blend until smooth (or pour into a blender in batches). Pour into the prepared crust. Arrange the asparagus over the top. Sprinkle with the Swiss cheese. Bake at 375 degrees F for 20-25 minutes, or until set. |
