Soy Pancakes

1 cup soy flour
2 ¾ cups all-purpose flour
3 tablespoons baking powder
3 tablespoons sugar
1 ½ teaspoons salt
3 eggs
3 cups milk
6 tablespoons salad oil
directions
Mix all the ingredients together until blended. Spray a griddle set at 350 degrees F with vegetable cooking spray. Pour about ½ cup of the batter onto the griddle and cook until light brown on both sides.

For thinner pancakes, add more milk.

Soymilk could be used in place of the regular milk.
