Broccoli Pesto
A low-fat alternative to the classic pesto!
Ingredients
1 bag (16 ounces) frozen chopped broccoli, thawed completely
1 cup chicken broth
1/4 cup grated Parmesan cheese
2 tablespoons olive oil
2 cloves garlic, minced
1/4 teaspoon salt
Pepper, to taste
Directions
Combine all the ingredients in a food processor or blender and pulse until smooth.
Suggestions
This is great tossed with cooked pasta, stirred into salad dressings, as a dip for fresh vegetables or a topping for grilled chicken breast.
