Hollandaise Sauce
A classic!
Ingredients
4 egg yolks
2 teaspoons lemon juice
A few dashes red pepper sauce
4 teaspoons water
2 sticks butter, melted
Salt and pepper to taste
Directions
Set a large pot over a small pot of simmering water. Add the egg yolks, lemon, hot sauce and water. Whisk until it turns a pale yellow. Season with the salt and pepper. Remove the bowl from heat and continue to whisk. Add the butter, a little at a time, until it is all incorporated.
Suggestions
Great over steamed vegetables, eggs or beef.
