1 bag of frozen mango chunks, or torture yourself and cut up a bunch of fresh ones Red onion 2 to 24 jalapeño peppers (to suit your taste) br>Handful of raisins Handful of garlic cloves Dash of malt vinegar Fresh cilantro 1 teaspoon allspice Juice of 1 lemon Pinch of salt |

Drop the handful of raisins into hot water for 15 minutes to reconstitute. Then throw everything but the cilantro and
the salt into the food processor or blender. Keep it going until all the raisins are pretty finely chopped. The more jalapeño peppers, the merrier. For authenticity, use fresh habanero peppers, but use rubber gloves when cutting them up. I am not joking. Add the roughly chopped cilantro last. All amounts are extremely subjective. Use as much or as little garlic and hot stuff as you need. The flavors are so strong that you're pretty safe whatever you do. Chop the cilantro by hand and stir it in. Then add salt to taste. The spicier it is, the more salt it will probably take. |
