Oven-Fried Pork Loin

Breading and baking the pork chops makes the meat very moist and tender. You can find cornflake crumbs with the breadings and not in the cereal section.

1/4 cup cornflake crumbs
1/4 teaspoon dried thyme
1/4 teaspoon dried sage
1/8 teaspoon salt (optional)
1/8 teaspoon ground black pepper
1 pound boneless top loin pork chops (about 3/4 inch to 1 inch thick), well trimmed
directions
Preheat oven to 350 degrees F. Spray an 8x8-inch baking dish with nonstick cooking spray.

Mix the first five ingredients in a plastic bag. Place a couple pieces of pork in the plastic bag and shake to coat evenly. Arrange pork in the baking pan so that they are not touching. Bake for 20 to 25 minutes or until pork is cooked.

Variation: Italian Oven Fried Pork – Substitute 1/2 teaspoon of Italian seasoning for the sage and thyme.
