| Pork and Potato Tacos |
| 1 pound ground pork 3 medium red potatoes, grated 1/4 cup water Cumin and chili powder, to taste Salt and pepper, to taste Taco shells, heated Toppings: shredded lettuce, grated cheese, chopped tomato, sour cream, black olives, avocado slices, chopped cilantro |
| Cook the pork in a skillet until almost done. Add the grated potatoes and water. Spread the mixture evenly in the bottom of the skillet. Cover and cook until potatoes are tender, about 15 minutes. Stir and season with cumin, chili powder and salt and pepper to taste. | ||
| To serve, spoon mixture into heated taco
shells and add desired toppings. |
