Baked Carnitas

Ingredients
1 pound pork, cut into 1-inch cubes
1/2 to 1 tablespoon ground, red Mexican chile powder
1 1/2 teaspoons ground cumin
4 cloves garlic, minced
1/3 cup fresh, chopped cilantro
Salt and pepper, to taste
Directions
Combine the chile, cumin, garlic, cilantro, salt and pepper. Rub into the meat and let it marinate for one to two hours. Place cubes on a baking rack and bake at 250 degrees F for about one and a half hours, or until meat is very crisp.
Suggestions
Serve with flour tortillas, shredded cheese, chopped tomatoes and sour cream.
