Beans and Tortillas
Meg Parish
This dish was my husband's favorite as a child and now it is our kids' favorite. When I ask my family what they want for dinner, this is always the answer (one of the few things in life my 18-year-old and 3-year-old can agree on!!). Since it's a simple 15 minute recipe that's relatively healthy -- I'm always happy to comply!!
Ingredients
2 pounds ground beef
1 medium onion, diced
2 cans tomato sauce
3 cans red beans, drained
Corn tortillas
Brown Sugar
Vegetable oil
Pepper
Directions
Brown the ground beef and onion until meat is cooked; drain fat. Add the tomato sauce and red beans. Stir until heated thoroughly. Add brown sugar and pepper to taste. Think of this as a sweet chili -- that's the consistency you want.
Pour a little oil in a medium-sized frying pan and cook the corn tortillas a minute or so on each side until just crispy. Drain on paper towels.
Serve the beans over the top of the crispy tortillas. Garnish with cheese and sour cream if desired.
