Beef and Snow Peas
Ingredients
Marinade:
2 tablespoons dry sherry
2 tablespoons soy sauce
3 tablespoons cornstarch
3 cloves garlic, minced
1 pound sirloin, cut into thin slices
3 tablespoons oil
1 package (8 ounces) sliced fresh mushrooms
1/2 pound fresh snow peas
1 teaspoon sugar
2 tablespoons soy sauce
1 cup canned beef broth
2 tablespoons cornstarch
1 tablespoon water
Directions
Combine the marinade ingredients. Pour over beef and let stand 30 minutes.
In a skillet or wok, heat the oil. Add the beef and cook about one minute, stirring constantly. Add the mushrooms and snow peas, and cook about two minutes. Remove meat, snow peas and mushrooms from skillet. Set aside. Add the 2 tablespoons soy sauce, sugar and beef broth. In a small bowl, combine the cornstarch and water. Add to soy sauce mixture. Bring to boil and cook until thick and bubbly. Add the meat/vegetable mixture back to skillet. Stir until combined.
