Beef and Spinach Bake
Ingredients
1 pound lean ground beef
1 onion, chopped
2 to 3 cloves garlic, minced
1 package (8 ounces) fresh mushrooms, sliced
2 packages (10 ounces each) frozen chopped spinach, thawed and squeezed dry
1 cup sour cream
1 teaspoon dried oregano
1 can cream mushroom soup
2 cups grated Monterey Jack cheese
Salt and pepper, to taste
Directions
Cook the ground beef, onion and garlic in a skillet until meat is browned. Stir in the mushrooms, spinach, sour cream, oregano, soup, salt and pepper. Mix well. Spoon into a lightly greased baking dish. Top with the grated cheese. Bake at 350 degrees F for 20 to 30 minutes.
