Beef and Spinach Casserole
Ingredients
1 pound lean ground beef
1 onion, chopped
3 cloves garlic, minced
1 box frozen spinach, thawed and squeezed dry
3 cups cooked white rice
2 cups shredded Colby-Jack cheese
3 eggs
3/4 cup milk
Salt and pepper to taste
1 cup of your favorite spaghetti sauce
Directions
Cook the onion, ground beef and garlic until meat is browned. Turn off heat and add the spinach, rice and 1 cup of cheese. Mix well.
In a bowl, combine the eggs, milk, salt and pepper. Pour into meat mixture and mix well. Pour into a lightly greased casserole dish. Bake at 350 degrees F for 30 minutes. Top with the remaining cheese and spaghetti sauce and continue cooking 20 more minutes.
