Beef and Spinach with Noodles
Ingredients
1 pound sirloin, cut into 1/8-inch slices
1/4 cup hoisin sauce
2 tablespoons soy sauce
1 tablespoon water
2 teaspoons sesame oil
3 cloves garlic, minced
6 ounces thin spaghetti
1 package (10 ounces) frozen spinach, thawed and squeezed dry
1 can (8 ounces) sliced water chestnuts, drained
1/2 cup chopped green onions
2 teaspoon chopped red chili peppers, optional
Directions
Combine the hoisin sauce, soy, water, sesame oil and garlic. Pour half of the marinade into a plastic zipper storage bag. Add beef and seal. Marinate in the refrigerator at least 30 minutes.
While the meat is marinating, cook the pasta according to package directions.
Remove the beef from the marinade, discarding marinade. Heat a little oil in a skillet or wok until hot. Cook the beef in batches until no longer pink. Remove all beef. Add the pasta, spinach, water chestnuts, onions and reserved marinade. Cook about one minute, then return the beef to skillet. Heat through. Stir in chili peppers, if desired. Serve.
