Chili Con Queso Meatballs
Meatballs in a spicy cheese sauce.
Ingredients
1 1/2 pounds lean ground beef
1 cup breadcrumbs
1/2 cup finely chopped onions
1/3 cup milk
1 teaspoon parsley flakes
1 egg
1 can (4 ounces) chopped green chiles
16 ounces processed cheese loaf
1 package dry taco seasoning
3/4 cup water
Directions
Combine the ground beef, breadcrumbs, onions, milk, parsley and egg. Season with salt and pepper to taste. Shape into meatballs. Heat a small amount of oil in a skillet. Cook meatballs until browned and cooked through. Remove.
In same skillet, combine the chiles, cheese, taco seasoning and water. Cook until cheese melts. Return meatballs to skillet. Heat through.
Suggestions
Serve with Spanish rice and a crisp salad.
