Garlic Pork Loin
Ingredients
1 pork loin roast, about 5 pounds
1 small bell pepper, finely chopped
3/4 cup green onions, sliced
1/2 cup celery, finely chopped
8 to 10 garlic cloves, minced
1 teaspoon salt
1/4 teaspoon cayenne pepper
1/8 teaspoon black pepper
Directions
Cut a deep pocket between each rib on the meaty side of the roast. In a bowl, combine the green pepper, celery, green onions, and garlic. Mix well. Stuff this mixture into the pocket on the roast. Season the roast with the salt, black pepper and cayenne pepper. Bake on a rack in a shallow roasting pan at 325 degrees F for two to three hours, or until a meat thermometer registers 170 degrees F. Let the roast stand 15 minutes before serving.
