Kathy Smith's Master Stir Fry Recipe

Kathy Smith shares her master recipe for stir fry! After you have mastered the basic stir fry, you can vary the taste by enjoying one of the three different sauces.
Ingredients
Master Stir Fry:
1 pound meat/poultry/seafood, cut into 1-inch pieces
1 pound vegetables, cut into 1-inch pieces (use a mixture, such as broccoli, mushrooms and bell peppers)
1 to 2 cloves garlic, chopped
1 tablespoon ginger, chopped
4 tablespoons canola oil
Black Bean Stir Fry Sauce:
1/4 cup black bean garlic sauce
3/4 cup low-fat/low-sodium chicken broth
1 1/2 tablespoons cornstarch dissolved in 1 tablespoon water
1 tablespoon minced ginger
1/4 cup chopped scallion
Spicy Garlic Stir Fry Sauce:
1/2 cup low fat/low sodium chicken broth
1 1/2 tablespoons low-sodium soy sauce
1 1/2 teaspoons chili garlic sauce
1 tablespoon honey
1 tablespoon ketchup
1 teaspoon cornstarch dissolved in 1 tablespoon water
1 tablespoon dry sherry
Thai Flavors Stir Fry Sauce:
1/2 cup low-fat/low-sodium chicken broth
1 clove garlic, minced
3 tablespoons Thai fish sauce (or low-sodium soy sauce, if preferred)
1 tablespoon honey
1/2 to 1 serrano chili, minced
1 teaspoon cornstarch dissolved in 1 tablespoon water
1 tablespoon fresh lime juice
Chopped fresh cilantro and mint, for garnish (optional)
Directions
To cook the stir fry, make sure that you have ALL the ingredients ready at this point, since this method of cooking goes very quickly.
Heat wok or large skillet over high heat. Add 2 tablespoons of the oil until almost smoking. Add the vegetables and stir-fry three to five minutes, and then remove to a plate.
Add 1 to 2 tablespoons more of oil as needed, and add meat and cook quickly for two to three minutes. Add the ginger and garlic to the meat and stir until the meat is almost done. Add the veggies back to the pan and stir one minute to heat through. Now you can add in your choice of stir-fry sauces. Serves four.
To make black bean stir-fry sauce, combine all the ingredients in a small saucepan and simmer until thickened, three to four minutes. Add to completed stir-fry and serve.
To make the spicy garlic stir-fry sauce, combine all the ingredients in a small saucepan and simmer until thickened, three to four minutes. Add to completed stir-fry and serve.
To make Thai flavors stir fry sauce, combine all the ingredients in a small saucepan and simmer until thickened, three to four minutes. Add to completed stir-fry and serve, sprinkled with fresh herbs, if desired.
Suggestions
Serve with fresh fruit for dessert.
