Slow-cooked BBQ Beef Sandwiches
This recipe came from the 50+ Friends Cookbook
Ingredients
2 1/2- to 3-pound lean boneless chuck roast
1/2 cup tomato ketchup
2 tablespoons Dijon-style mustard
4 tablespoons brown sugar
3 cloves garlic, crushed
1 tablespoon Worcestershire sauce
3 tablespoons red wine vinegar
1/2 teaspoon liquid smoke flavoring
1/2 teaspoon salt
1/2 teaspoon pepper
10 to 12 French rolls or sandwich buns
Directions
Place the beef in a slow cooker. Combine the remaining ingredients, except rolls, and pour over meat. Cover and cook on low for eight to nine hours. Refrigerate for later use or prepare the sandwiches now.
Shred the beef by pulling it apart with two forks. Add one cup of the sauce and reheat the mixture in the microwave if you refrigerated it. Spoon on warm, open-face rolls or buns. Top with additional warm sauce, if desired. Makes 10 to 12 servings.
