Stuffed Veggie Burgers

Ingredients
2 pounds ground chuck
2 tablespoon ketchup
1/4 teaspoon salt
Dash of pepper
1 bell pepper, seeded and sliced into rings
Sliced mushrooms, about six large
2 small sliced yellow squash
1 small onion, chopped
Directions
Mix the ground chuck, ketchup, salt and pepper well. Form into eight thin patties. Place one slice of squash, two slices of mushroom, one bell pepper ring on top, then sprinkle with some of the onion. Top with another meat pattie and pinch edges to seal.
Grill or broil until cooked through and no longer pink.
Suggestions
Can be made ahead of time and frozen until ready to cook. Top with your favorite condiments.
