Angel Hair Pasta with Spinach and Garlic
Ingredients
8 ounces angel hair pasta
1/2 of a 10-ounce package frozen chopped spinach, thawed and squeezed dry
1 tablespoon olive oil
3 cloves garlic, minced
1/2 cup dry white wine
1/4 cup lemon juice
1 tomato, chopped
1/4 cup chopped fresh basil
1/4 cup freshly grated Parmesan cheese
Pepper, to taste
Directions
Heat olive oil in a skillet. Add the garlic and cook until it turns light brown (do not burn). Remove the pan from the heat and add the wine. Return to heat and cook about two minutes or until wine is reduced by half. Add the lemon juice, spinach and tomato. Set aside.
Cook angel hair pasta according to package directions. Drain. Add to spinach mixture. Stir in the basil, Parmesan cheese and pepper to taste. Toss to coat. Serve.
Suggestions
Serve with additional grated Parmesan cheese.
