Creamy Chicken Manicotti
Manicotti stuffed with shredded chicken, broccoli and cheeses.
Ingredients
12 manicotti pasta shells
8 ounces whipped cream cheese with chives and onions
2/3 cup milk
1/2 cup Romano cheese, grated
2 cups shredded, cooked chicken
1 package (10 ounces) frozen chopped broccoli, thawed and drained
2 tablespoons grated Parmesan cheese
Black pepper, to taste
Directions
Cook the manicotti according to package directions. Rinse with cold water, drain, and set aside.
Combine the cream cheese and milk in a saucepan. Cook over low heat until the cheese melts. Stir in the Romano cheese. Set aside about 3/4 cup of the sauce. Add the chicken broccoli and pepper to the remaining sauce. Mix well. Stuff this mixture into the shells. Arrange in a 13x9x2-inch baking dish. Spoon the remaining sauce over the top. Cover with foil and bake at 350 degrees F for about 20 minutes. Uncover, top with grated Parmesan, and continue baking another five to 10 minutes.

Serve with a salad and a fresh loaf of Italian bread!
