Easy Spinach Ravioli
Gayle deGans
Ingredients
1 package of wonton wrappers
1 package of frozen spinach or equivalent of fresh, cooked
1 medium onion, minced
3 cloves garlic, minced
1 cup cottage cheese
1 cup ricotta cheese
1 teaspoon nutmeg
Directions
Saute all ingredients except wonton wrappers in skillet until soft. Remove from heat.
Boil water in large pot. Prepare ravioli while waiting for water to boil. Take one raw wonton wrapper and fill with 1 to 2 tablespoons of filling. Turn wonton so that when folded in half it will form a triangle. Wet the edges of wonton with water from a wet brush or your finger. Fold in half and push out air allowing a few minutes for water to seal the ravioli. Drop into boiling water and remove when they rise to surface and look opaque.
