Fettuccini with Blue Cheese Sauce
Ingredients
1 box (16 ounces) fettuccini, cooked and kept warm
1 tablespoon olive oil
2 to 3 garlic cloves, minced
1 container (4 ounces) blue cheese, crumbled
1/2 cup grated Parmesan cheese
2 cups heavy cream or half-and-half
2 teaspoons Italian seasoning
Pepper, to taste
Directions
Heat the olive oil in a skillet. Cook the garlic until lightly browned, stirring constantly. Do not burn! Remove the garlic pieces and discard. Set aside the oil.
In a saucepan, combine the cream, blue cheese and grated Parmesan. Stir over low heat until the cheese melts. Add the garlic oil, Italian seasoning and pepper to taste. Pour over fettuccini. Serve.
Suggestions
Garnish with fresh parsley, if desired.
