Greek Penne Pasta
Ingredients
1 package (12 ounces) penne pasta
3 tablespoons olive oil
3 cloves garlic, minced
1 package (10 ounces) frozen chopped spinach, squeezed dry
2 large tomatoes, chopped
2 tablespoons lemon juice
1 package (6 ounces) crumbled feta cheese
Salt and pepper, to taste
Directions
Cook pasta according to package directions. Set aside.
Heat the oil in a large skillet. Add the garlic and cook for one minute. Add the spinach and pasta. Toss to coat. Heat through. Remove from heat and add the tomatoes, lemon juice, feta cheese, salt and pepper. Toss again. Serve.
Suggestions
Serve with a salad and breadsticks.
