Greek Penne Pasta


1 package (12 ounces) penne pasta
3 tablespoons olive oil
3 cloves garlic, minced
1 package (10 ounces) frozen chopped spinach, squeezed dry
2 large tomatoes, chopped
2 tablespoons lemon juice
1 package (6 ounces) crumbled feta cheese
Salt and pepper to taste
directions
Cook pasta according to package directions. Set aside.

Heat the oil in a large skillet. Add the garlic and cook for 1 minute. Add the spinach and pasta. Toss to coat. Heat through. Remove from heat and add the tomatoes, lemon juice, feta cheese, salt and pepper. Toss again. Serve.

Serve with a salad and breadsticks.
