Mexican Goulash
Ingredients
1/2 pound lean ground beef
1 small onion, chopped
1/4 cup chopped green bell pepper
2 cups uncooked macaroni
3 cups tomato juice
1/2 teaspoon garlic powder
1/2 teaspoon chili powder
1 cup shredded cheddar cheese
Pepper, to taste
Directions
Cook the macaroni according to package directions. Set aside.
In a skillet, cook the ground beef, onion and bell pepper until meat is browned. Drain fat, then add the tomato juice, cooked macaroni, garlic powder, chili powder and pepper to taste. Simmer on low heat until almost all the liquid is absorbed. Top with shredded cheese and cook until melted. Serve.
