Perogi Casserole


Potatoes, cheese and onion baked with lasagna noodles.

Ingredients

10 to 12 potatoes, boiled and mashed
2 cups shredded cheddar cheese
2 sticks margarine
1 large onion, chopped
10 to 12 lasagna noodles

Directions

Cook lasagna noodles according to package directions. Drain and set aside.

Saute onion in the margarine until soft. In a large bowl, combine the mashed potatoes and cheese. Add about one-third of the onion/margarine mixture. Season with salt and pepper to taste. Mix well.

Cover the bottom of a butter casserole with lasanga noodles. Layer one-third of the potato mixture. Repeat layers, ending with noodles. Pour remaining onion/margarine mixture over the top. Cover and bake at 350 degrees F for about 30 minutes.

Suggestions

Serve with a salad and corn-on-the-cob.
