Goat Cheese and Artichoke Pizza
Ingredients
1 pre-baked pizza shell or your favorite pizza dough recipe, unbaked
6 ounces shredded, low-fat mozzarella cheese
4 ounces goat cheese, crumbled
1 jar marinated artichoke hearts, drained well and chopped
1 medium tomato, seeded and chopped
1 teaspoon olive oil, plus additional for brushing
Directions
Lightly brush the dough with a little olive oil. Top with both cheeses, the artichokes and tomato. Drizzle the 1 teaspoon olive oil over the top. Bake at 500 degrees F about eight minutes.
