Margherita Pizza
Ingredients
1 can (28 ounces) whole tomatoes, drained well
1 tablespoon olive oil, plus additional for brushing
2 to 3 cloves garlic, minced
6 ounces sliced, low-fat mozzarella cheese
1/4 cup chopped, fresh basil leaves
1/4 cup freshly-grated Parmesan cheese
1 pre-baked pizza shell or your favorite pizza dough recipe, unbaked
Directions
Brush the pizza dough or shell with a little olive oil. Set aside.
Combine the tomatoes, garlic and olive oil. Spread half over pizza crust. Top with the sliced mozzarella cheese and remaining tomatoes. Bake at 500 degrees F for about eight minutes. Remove from oven, and sprinkle with the Parmesan cheese and chopped basil.
