Baked Potatoes Jack

Ingredients
6 medium potatoes, baked
1/2 cup butter, melted
1 cup sour cream
1 1/2 cups grated Monterey Jack cheese
1/4 cup chopped parsley
1 1/2 cups chopped green onions, with tops
4 to 5 slices bacon, cooked and crumbled
Directions
Preheat oven to 325 degrees F. Mash potatoes with fork, leaving some lumps. Place them in a 13x9x2-inch baking dish.
In a bowl, combine sour cream, butter and cheese. Sprinkle over the potatoes, then top with the parsley, green onions and crumbled bacon. Leave bumpy.
Bake about 30 minutes or until heated through.
Suggestions
This recipe can be halved for smaller families.
