Hashbrowns
Recipe is from Peanut Butter Stew and Couscous, Too Quick, Healthy, Delicious Meals that Grown-Ups and Kids Love
Ingredients
Use 1 large or 2 small potatoes per person.
Directions
Scrub and remove eyes from your favorite type of potato. Cut into 1-inch cubes and boil or microwave until soft. Saute one diced onion and two cloves minced garlic in 1 to 2 tablespoons butter until soft and translucent. Add potatoes and saute for about five minutes. Add 1 cup mild shredded cheese, pepper and salt.
Suggestions
Serve hot with ketchup or salsa.
