Oven Roasted Potatoes
Recipe is from Peanut Butter Stew and Couscous, Too Quick, Healthy, Delicious Meals that Grown-Ups and Kids Love
Ingredients
Use 1 large or 2 small potatoes per person.
Directions
Scrub and remove eyes from your favorite type of potato. Slice into wedges and par boil (place in boiling water for two to three minutes and then drain). Toss with 1 to 2 tablespoons olive or vegetable oil, 1 teaspoon oregano, and pepper and salt to taste. Bake at 450 degrees F on baking sheet, turning potatoes every 10 minutes until crispy brown.
