Sweet Potato Casserole
Donna Smith
A delicous way to serve sweet potatoes
Ingredients
6 medium sweet potatoes (about 3 pounds), cooked
3/4 cup sugar
1/3 cup milk
1/4 cup butter or margarine, melted
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
2 eggs, beaten
1/3 cup firmly packed brown sugar
1/3 cup chopped pecans
2 tablespoons flour
2 tablespoons butter or margarine, melted
Directions
In a large bowl, mash the sweet potatoes with the sugar, milk, melted butter, vanilla extract, ground cinnamon, and eggs. Spoon into a lightly greased 2-quart casserole. In another bowl, combine the brown sugar, chopped pecans, flour, and 2 tablespoons melted butter. Sprinkle over the top of the sweet potato mixture. Bake at 350 degrees F about 30 minutes.
Suggestions
For a lighter casserole, whip the sweet potatoes with an electric mixer.
