| Two Potato Bake |
| 1 large sweet potato, thinly sliced 1 large white potato, thinly sliced 1 onion, thinly sliced 4 tablespoons butter, cut into cubes Salt and pepper, to taste 2 tablespoons flour 3/4 cup chicken or vegetable broth 1 cup shredded mozzarella cheese 3 tablespoons dry breadcrumbs |
| Grease the bottom of a 13x9-inch baking pan. Place a
layer of sweet potatoes to cover the bottom. Top with some of the onion, dot
with a little butter and season with salt and pepper. Repeat layers,
alternating between the white and sweet potatoes. In a bowl, combine the flour and broth. Pour over the potatoes, and then top with the cheese, breadcrumbs and remaining butter. Cover pan with foil and bake at 350 degrees F for about one hour or until potatoes are tender. Let stand for 10 minutes before serving. |
