Oven Roasted Potatoes

Total time = 20-30 minutes

Use 1 large or 2 small potatoes per person.
Scrub and remove eyes from your favorite type of potato.

Slice into wedges and par boil (place in boiling water for 2-3 minutes and then drain). Toss with 1-2 T olive or vegetable oil, 1 t. oregano, and pepper and salt to taste. Bake at 450 degrees on baking sheet, turning potatoes every 10 minutes until crispy brown.
