| 2 cups cold mashed potatoes 1 cup cottage cheese (if there's any liquid in the container, drain it off) 2 eggs Breadcrumbs 2 tablespoons oil |
| Combine the mashed potatoes, cottage cheese and eggs.
Form the dough into spheres the size of golf balls (or a bit bigger) and roll
into the breadcrumbs. Shape into patties. Heat oil in a skillet. Fry the patties until golden, about three minutes per side. Turn heat to low, cover pan and continue to cook about five more minutes. Serve. |
