Chef Duke’s Bayou Mama’s Potato Salad

12 potatoes
6 boiled eggs
1 onion, diced
2 cloves of garlic, minced
5 green onions, thinly sliced
4 stalks of celery, diced
1 tablespoon celery seed
2 tablespoons mustard powder
¼ cup olive oil
1 ½ cups mayonnaise
Salt and pepper to taste
directions
Boil potatoes whole and cook until soft, but not mushy. Cut into small pieces and put in mixing bowl. Chop eggs in small pieces and add to potatoes. Add remaining ingredients and mix well.
