| Stuffed New Potatoes |
| 1 dozen new potatoes, scrubbed 2 hard-boiled eggs, chopped 2 tablespoons mayonnaise 1/2 teaspoon minced garlic 1 teaspoon finely-chopped parsley, plus additional for garnish 2 tablespoons minced red onion, plus additional for garnish |
| Cook the potatoes until tender in boiling water, about
nine to 10 minutes. Drain and immediately put into an ice bath to stop the
cooking process. Drain again and pat them dry with a paper towel. Using a melonballer, gently scoop out the inside of the potato, leaving a "shell." Set aside. Add the inside of the potatoes to a bowl. Add the chopped eggs, mayonnaise, garlic, parsley and red onion. Mix well. Season with salt and pepper to taste. Fill each potato shell with some of the mixture. Garnish with additional chopped red onion and parsley. |
