1, 2, 3 Hawaiian Chicken

Serves four.
Ingredients
1 1/2 pounds skinless, boneless chicken breasts (works well with other cuts too)
1 can (8 ounces) pineapple chunks, in their own juice
1 bottle honey barbecue sauce
Directions
Cut the chicken into bite-sized pieces. Place in a baking dish. Add the pineapple chunks, reserving liquid, and approximately 1/4 to 1/2 of the bottle of barbecue sauce. Once mixed, add the pineapple juice until you reach the consistency you like.
Bake at 350 degrees F for about one hour or until chicken is cooked through.
Suggestions
For a sweeter dish, add more juice; for a spicier dish, add less juice and more barbecue sauce. Keep side dishes simple and bland since this dish has so many flavors of its own. I like to serve it with white rice.
