40-Clove Chicken
Ingredients
1 2- to 3-pound chicken, cut up
40 cloves garlic, peeled
3/4 cup dry white wine
1/4 cup olive oil
1 onion, chopped
1/4 cup fresh, chopped parsley
Juice of 1 lemon
1 teaspoon dried oregano
1 teaspoon dried basil
Salt and pepper, to taste
Directions
Place the chicken in a baking/roasting pan. Sprinkle the garlic cloves around the chicken, and then evenly distribute the remaining ingredients over chicken. Cover pan tightly with foil.
Bake at 375 degrees F for 40 to 45 minutes. Uncover and continue to bake another 15 minutes.
