Almond-crusted Chicken
Ingredients
4 boneless, skinless chicken breast halves
1 cup dry breadcrumbs
1 1/2 cups sliced almonds, broken into small pieces
2 eggs
3 teaspoons water
2 tablespoons margarine
2 tablespoons canola oil
Salt and pepper, to taste
Directions
Combine the breadcrumbs, salt and pepper. Set aside. Put almonds in a shallow bowl. Set aside. In another bowl, combine the eggs and water. Set aside.
Dip the chicken breasts into the egg mixture, then into the breadcrumbs. Repeat a second time, and then dredge in almonds.
Heat the butter and oil in a skillet. Cook the chicken until browned on both sides and cooked through.
Suggestions
Serve with steamed snow peas and fried rice.
