Baked Broccoli and Chicken
Ingredients
4 boneless, skinless chicken breasts
2 cans cream of mushroom soup
Equal amounts mayonnaise to soup (2 cans of mayonnaise)
1 package frozen broccoli
1 package provolone or mozzarella cheese
1 cup of uncooked rice
Directions
Preheat oven to 375 degrees F.
Start by mixing the mayonnaise and soup in a bowl and set aside. Wash chicken. In a 10x8-inch baking pan, spread a layer of the soup mix on the bottom using a little less then half the soup mix. Cover the soup mix with a layer of broccoli. Place the chicken in a single layer on top of the broccoli and put the remainder of the soup mix on top of that. On the very top place a single layer of the cheese. Bake for about 30 to 45 minutes or until the chicken is done and the cheese is lightly brown on top.
Cook the rice according to the directions on package. Serve chicken and sauce on top of rice and enjoy!
