Bourbon Chicken
Ingredients
4 skinless, boneless chicken breasts
3 tablespoons olive oil
1 tablespoon butter
3 cloves garlic, minced
1 onion, finely chopped
2 tablespoons chicken broth
2 tablespoons bourbon
Salt and pepper, to taste
Directions
Heat the butter and olive oil in a skillet. Cook the garlic and onion until tender. Remove from pan with slotted spoon. Set aside.
Add the chicken to the same pan. Brown on both sides. Return garlic and onion to skillet and add chicken broth and bourbon. Cover and cook on low until chicken is cooked through, about 20 minutes.
Suggestions
Serve over cooked noodles or rice.
