Chicken Alfredo with Vegetables

Chicken, broccoli, zucchini and mushrooms cooked in a rich sauce and served over noodles

Ingredients

6 ounces fettuccine
2 cups cooked, shredded chicken
2 cups chopped fresh broccoli florets
2 small zucchini, julienned
1/2 cup chopped red bell pepper
1 cup sliced fresh mushrooms
1 package (8 ounces) cream cheese
6 tablespoons margarine or butter
1/2 cup milk
1/2 teaspoon garlic powder
Salt and pepper, to taste

Directions

Cook fettuccine according to package directions. Do not overcook. Drain.

While the pasta cooks, melt the cream cheese and margarine in a skillet until smooth. Stir in the milk, garlic powder, salt, and pepper. Cook about three minutes or until slightly thickened, stirring constantly. Add the chicken, broccoli, zucchini, red pepper and mushrooms. Cook about five minutes, or until vegetables are crisp-tender

Suggestions

To serve, combine sauce and fettuccine.
