Chicken Almond Casserole


Ingredients

4 cups diced cooked chicken
1/2 cup mayonnaise
1/2 cup plain yogurt
1 can cream mushroom soup
2 cups chicken broth
2 tablespoons lemon juice
1/2 cup chopped onion
4 cups cooked rice
1 can (8 ounces) sliced water chestnuts
2 cups sliced almonds
1 cup chopped celery
2/3 cups butter
2 cups corn flakes
Salt and pepper to taste

Directions

Combine the chicken, mayonnaise, yogurt, soup, broth, lemon juice, onion, rice, water chestnuts, celery and 1 cup of the almonds. Season with salt and pepper. Pour into a lightly greased casserole dish.

Combine the remaining almonds, butter and corn flake crumbs. Mix well. Sprinkle on to of the casserole. Bake at 350 degrees F for 40 minutes.

Suggestions

Serve with an egg roll for a complete meal.
