Chicken and Barley Dinner
Ingredients
1 broiler/fryer chicken (3 to 4 pounds), cut up and skin removed
3 tablespoons oil
2 quarts chicken or vegetable stock
1 cup uncooked brown rice
1/2 cup pearl barley
1 onion, chopped
2 to 3 bay leaves
1/2 teaspoon dried basil
2 teaspoons salt
Pepper, to taste
7 to 8 carrots, cut into pieces
3 cups fresh or frozen green beans
1 rib celery, chopped
Directions
Brown the chicken in the oil in a large soup pot. Remove the chicken and set aside. Drain the oil, then combine the stock, rice, barley, onion, bay leaves, basil, salt and pepper. Bring to a boil, reduce heat, then return chicken to the pot. Cover and simmer about 45 minutes. Add carrots, green beans and celery to the pot and cook another 30 minutes. Remove bay leaves before serving.
